Case in Point Part II: College kids can get great nomnoms on the $cheap$ (and it doesn’t have to be chicken)

You can get GREAT nomnoms and you don’t have to be eating chicken all the time.  Part II of this week’s Davis, CA showcase finds us with Top Stove Spareribs serving 4 at a total grocery raw mat price of $7.35.

  • This includes 1 pound of tasty squash/zucchini, 3 pounds of lovely spareribs, and 1 loaf of yummeroo butter top breads (your choice of either white/wheat).

Let’s break it down.

This meal serves 4 for $7.35.  That puts us at about $1.70ish (round up to $2.00) for a meal.

  • Single person can do 4 meals.  That’s about $1.70-something a meal.
  • What if I eat enough for 2 people? OK. So you get 2 meals for $3.60-something a meal.  AND, once again, you’re not using processed foods or eating MickeyD’s. You’re also eating fulfilling stuff.  What does $3.60 get you at Carl’s Jr.?  At any of the downtown restaurants?  還不錯. (Not too bad).

You’ll notice that the AJAXO.com shopping list incorporates a recipe search result.  How?  You can also reverse-lookup recipe ideas based on ingredients.  Search “beef, carrots, celery” and click “RECIPE” —> it’ll show you recipes that have those ingredients.  You don’t have to follow to the tee and can always feel free to mix & match.

Welcome back to the Ajaxo 4 Dollar Challenge! Eating on a budget doesn’t mean you have to eat less in quantity or quality. Today’s meal was only $3.76!

Our meal consists of the following grocery items:
- 1 pound of pre-cooked rice
- 1.75 pounds of chicken thigh (bone-in)
- 4 chicken eggs
- 15 oz. of frozen peas
- 4 stalks of green onions (scallions)

Begin by dicing your green onions and de-boning your chicken. Marinate the chicken as you deem fit. Here’s what we used:
- 2 tsps of soy sauce
- 2 tsps of sessame seed oil
- a dash of white pepper
- a few shakes of black pepper
- 1 tsp of salt
- 1-2 tablespoons of corn starch

The key with fried rice is high heat. High heat helps to seal in the flavor of your chicken. When the color begins to change, it’s time to add in the green peas. Stir for 30 seconds and then add in the rice. You can add in a dash of salt to help keep the rice from clumping together. When ready, add your eggs in. The eggs will give the rice that “golden” color, coating the rice for a deliciously smooth taste. Last, but not least, add the green onions. This will add color, preserve their integrity, and further accentuate the taste.

And there you have it. Using Ajaxo.com, we’ve created another meal where your grocery price was $3.76 altogether for a family of four! There’s enough to give everybody multiple helpings. Simple and easy.
